10 years vineyard, 300 metres above the sea level, exposed to the south east in Perugia (Umbria – Italy)

PRODUCTION METHOD
Spurred cordon with 4,000 plants per hectar limited 1,5-2 kg yield per plant
HARVEST
Manual in baskets in the second hailf of september with accurate grape selection
VINIFICATION
Total thinning followed by a cold quick prefermentation; fermentation for 20days at a temperature of < 30 °C with daily addition
AGING
In steel for 12 months with subsequent aging in bottles
